This tasty gingerbread recipe is great to make into stars to hang on the tree or to gingerbread men decorated as santa! I find they go really well at school bake sales and the kids have so much fun decorating them.
170 for 10-12 minutes or until nice golden brown colour.
110g Plain flour
1 tsp Bicarb
1tsp Ground ginger
½ tsp Mixed spice
50g Soft light brown sugar
100g Golden syrup
Royal icing for decoration
Melt the butter, syrup and sugar together until runny and smooth- do not boil.
Mix the dry ingredients in a bowl and well the centre.
Pour the syrup into the centre and mix until it forms a dough.
Rest for 1 hour.
Tip on to a lightly floured side and bring together with your hands, roll into a ball and cover with cling film. Put in the fridge for around an hour to rest.
Roll out between 2 sheets of greaseproof paper to around ½ cm thick
Cut out your shapes and bake on a tray of greaseproof paper in a preheated oven.
Bake until a nice even golden brown (5-12 minutes depending on size)
When they come out of the oven make a hole with the end of a straw.
Allow to cool and decorate with royal icing/ sugar balls/ edible glitter.
